In Odoo, you can place a sales order even if the product is not yet in stock.
At the moment of order creation, you can see the availability of the product using the corresponding icon. Red color indicates that the product is insufficient in stock, blue - sufficient:
At the same time, the system does not just look at the stock balances. It takes into account the quantity of goods already reserved and the expected arrivals from suppliers. Only those arrivals that are expected to arrive at the warehouse before the client's shipment date are considered:
Thus, when placing an order, you can operate not only with current but also with planned stock.
If during the order processing the product is still insufficient, this will not hinder the sale in any way. In this case, when the required product arrives at the warehouse, it will automatically be reserved for the customer's order. Warehouse employees will be able to see that the order is ready and can be shipped to the customer by changing the status from "waiting" to "prepared":
